Is the taste of violet the same as the scent?

Aromatic Isolates and their role in the Fragrance Industry

Ionone (alpha & beta) are two remarkable isolates obtained respectfully from Acacia Farnesiana & Litsea Cubeba.

1. If the scent of Alpha-Ionone could be assigned to a colour, it would be violet and if a taste is imagined, it would be similar to those vintage mauve pastel candies that taste like violet

Parma Violets

Wild violets possess a very faint powdery sweet aroma, however the flowers do not yield enough essential oil to be used in the flavour or scent industry. Therefore chemists extract aromatic isolates from a variety of other naturally fragrant botanicals namely, Acacia farnesiana and Litsea cubeba. Due to the high cost; naturally sourced Alpha and Beta ionone are not used in flavor manufacturing, however high end perfumers rely on both natural and synthetic versions.


The taste of violet is an exaggerated version that flavour chemists have invented - to which we have become culturally or chemically conditioned into believing that the taste of violet and the smell of a violet soap are the same.


  1. Alpha ionone (derived from Acacia Farnsiana flowers) is known as a modifier helping to smooth out the pointy bits in a botanical perfume.  Just a few drops helps to blend, and bridge the gap between a light floral such as Neroli with citrus notes. It is an invaluable additive when creating light floral perfumes.


2. Beta-Ionone (derived from Litsea cubeba fruit) possesses a woody berry-plum-like profile with a warm honey hue similar to bees wax, with a very slight similarity to the stronger violet aroma that Alpha ionone possesses. The beta version of ionone is also a modifier, in that it helps to bridge the gaps between multiple base notes while applying a fixative quality.
